Nine dogs and three sides. The sausage is griddled to order, the bun is toasted on the flat top, and the cheddar comes down warm from the pot. Nothing waits under a lamp.

Cheddar opened in 2014 on a corner of Condesa. There is no dining room: there is a steel counter, a flat top and a pot of cheese kept at the right temperature all day. You order at the counter, you sit wherever there is room, and you eat it standing if you have to.
We do not take bookings. If the six stools are full, the wait is short and the beer is cold.
